Why Tomatoes Taste Of Very Little Now

Tomato flavour lives in volatile aroma compounds, and the traits bred in for uniform ripening and long-distance shipping quietly removed the sugars and volatiles that produce it.

A supermarket tomato looks correct, cuts cleanly and tastes of almost nothing. Each step that produced it was reasonable, and flavour was the variable nobody was measuring.

Flavour is mostly aroma, not sweetness

What people describe as tomato taste comes largely from volatile compounds released when the fruit is cut, working alongside a balance of sugars and acids.

Those volatiles are produced late in ripening, in small quantities, and are easily lost. Sugar and acid alone give sweetness and sharpness but not the smell that makes it recognisable.

A fruit can therefore be perfectly ripe by every measurable standard and still taste flat, because the part that carries the character was never made or has evaporated.

Uniform ripening was selected for and cost sugar

Growers wanted fruit that turned red evenly, because patchy shoulders look unripe and get rejected. A trait producing that uniformity was bred into commercial varieties widely.

The same trait turned out to reduce the fruit's own sugar production during ripening, so evenly coloured tomatoes were, on average, less sweet than the blotchy ones they replaced.

The trade was invisible at the time because appearance is inspected at every stage of the chain and flavour is inspected at none of them.

Picked green and ripened by gas

Tomatoes destined for long journeys are harvested firm and green, when they survive handling, and are ripened later in controlled rooms using ethylene, the gas the fruit produces naturally.

Ethylene reliably turns the fruit red and softens it. What it cannot do is supply the sugars the fruit would have drawn from the plant over its remaining days on the vine.

The result is a fruit that has completed the visible parts of ripening without completing the chemical ones.

The fridge finishes the job

Cold storage below roughly the temperature of a cool room suppresses the enzymes that generate aroma compounds, and much of that capacity does not return on warming.

Chilling is unavoidable in a modern distribution chain, and it happens again in most kitchens, so the fruit is cold-damaged twice before anybody eats it.

This is the one part of the sequence a shopper controls, and keeping tomatoes out of the fridge measurably preserves what aroma they arrived with.

The chain pays for firmness

Every actor between the field and the shelf is judged on yield, shelf life, uniformity and damage rates. Each of those is easy to count and easy to write into a contract.

Flavour has no equivalent measure, no premium attached at most points in the chain, and no way of being verified before the fruit is sold.

Varieties bred for taste exist and command higher prices where growers can sell directly. Wherever a tomato passes through many hands, the countable traits win.
