Why Bread Goes Stale Faster In The Fridge

Staling is starch recrystallising rather than bread drying out, and that process runs fastest at fridge temperatures, which is why chilled bread firms up within a day.

Bread kept in the fridge is noticeably worse the next day than bread left on the counter. Refrigeration slows almost everything in a kitchen, and this is a genuine exception.

Staling is recrystallisation, not drying

During baking, starch granules absorb water and swell into a soft, disordered structure. That disorder is what makes fresh bread tender.

As the loaf cools and sits, the starch molecules gradually rearrange themselves back into an ordered crystalline form, squeezing water out of that structure as they go.

The bread becomes firm and crumbly while still containing most of its original water. A loaf sealed in a bag with no moisture escaping stales perfectly well.

The process is fastest just above freezing

Retrogradation, as the rearrangement is called, has an awkward temperature profile. It proceeds slowly at room temperature, faster as things cool, and fastest a little above freezing.

A domestic fridge sits almost exactly in that window, so it accelerates the main mechanism of staling while doing nothing helpful about it.

The rule of thumb that cold preserves food holds for microbial spoilage and fails here, because the change involved is physical rather than biological.

The freezer is the right cold place

Below freezing the molecules lose the mobility the rearrangement requires, and the process effectively stops rather than merely slowing.

Bread frozen while fresh and thawed later is close to what went in, provided it passed through the fridge range quickly in both directions.

Slicing before freezing helps considerably, since individual slices freeze and thaw fast, while a whole loaf lingers in the worst temperature band on the way through.

Heat reverses part of it

Warming stale bread breaks up some of the crystalline structure and temporarily restores softness, which is the whole basis of toasting yesterday's loaf.

The effect does not last. Once cooled, the starch rearranges again, and rather faster than the first time, since the process has a head start.

This is why reheated bread is briefly excellent and then quite bad, and why the trick works once rather than repeatedly.

The recipe changes the timetable

Fats, sugars, milk and certain enzymes interfere with the starch rearranging, which is why enriched breads stay soft for days while a lean crusty loaf is past its best by evening.

Commercial bakers add enzymes and emulsifiers for exactly this reason, and the resulting shelf life is a formulation decision rather than a preservative one.

Crust behaves differently again, going soft as moisture migrates outward from the crumb, so a loaf can become simultaneously firmer inside and floppier outside.
