The Non-Stick Pan That Stopped Being Non-Stick
The coating is thin, soft and heat-sensitive, and much of what looks like failure is polymerised oil built up on top of a surface that is still perfectly intact.

A pan that released a fried egg effortlessly in its first year now grips everything. Two separate things go wrong, and only one of them is the coating wearing out.
The coating is thin and soft
The non-stick layer is a fluoropolymer film measured in fractions of a millimetre, bonded to metal that is vastly harder than the film sitting on it.
It resists sticking because almost nothing bonds to it chemically. It does not resist scratching, and metal utensils, stacked pans and abrasive pads all remove material.
Damage is cumulative and mostly invisible until enough of the film has gone for food to reach the metal underneath in patches.
Heat is the other enemy
The polymer is stable across normal cooking temperatures and begins to degrade above them, which is easy to reach with an empty pan on a powerful burner.
An empty pan heats far faster than a loaded one, because there is no food or liquid absorbing energy. Preheating on high is the most common way of overshooting.
Degradation does not produce an obvious mark. The surface simply becomes less effective, and the change is put down to the pan getting old.
Often the coating is fine
Thin films of cooking oil left on the surface polymerise under heat into a hard, sticky varnish, the same process that seasons a cast-iron pan deliberately.
On non-stick that layer is an unwanted addition, and food sticks to it enthusiastically. The pan is not failing, it is wearing a coat of something that does stick.
Washing while the pan is warm, with detergent rather than a quick rinse, removes the oil before it bakes on. Once it has built up, gentle scrubbing usually recovers the pan.
Dishwashers accelerate everything
Machine detergents are strongly alkaline and abrasive by design, and repeated cycles attack the bond between the coating and the metal beneath it.
The long hot dry cycle adds thermal stress, and pans knocking against racks and other items supply the mechanical damage.
Cooking sprays contribute their own problem, since the propellants and lecithin in them leave residue that polymerises particularly readily.
The pan is a consumable sold as an appliance
A non-stick pan has a service life measured in a few years of regular use, and no amount of careful treatment converts it into a lifetime object.
It is nonetheless sold alongside cookware that genuinely lasts decades, at prices and in packaging that invite the same expectation.
Treating it as a wearing part changes the purchasing decision considerably, and explains why cheap pans replaced often outperform expensive ones kept too long.
